    Maple Syrup Production

    The native Algonquins taught the early settlers how to make maple syrup. It has since become a traditional rite of spring in rural Ontario and every rural landowner should try it once whether you plan to get into full-scale production or just want to tap a few trees for your own use.

    Many families have been producing maple syrup for several generations in the same sugar bush. If you use good forestry practices your trees will remain strong, healthy and productive. Sugar Maple is an extension note describing how to manage a sugar maple forest for syrup production. A well-managed sugar bush also provides food and shelter for a wide variety of wildlife. Birds love the dead branches and cavities found in older trees and these can go on producing sap for over 200 years. You will also need to cut some trees if you plan to use a wood-fired evaporator. Maple syrup making is a good example of sustainable food production.

    The Ontario Ministry of Agriculture and Rural Affairs has information on the regulations pertaining to maple syrup production in Ontario. The Ontario Maple Syrup Producers Association is a producer based organization formed in 1966 to represent maple syrup producers across the province of Ontario. Their website provides a wealth of information on such topics as grading, regulations and events and festivals.
